Walnut oil is a strongly yellow oil with characteristic walnut taste.

Walnut oil is oil extracted from walnuts, Juglans regia. The oil contains polyunsaturated fatty acids, monounsaturated fatty acids, and saturated fats 

A walnut is the edible seed of a drupe, and thus not a true botanical nut. It is commonly consumed as a nut. After fully ripening for its edible seed when the shell has been discarded, it is used as a garnish or a snack. Nuts of the eastern black walnut (Juglans nigra) and butternuts (Juglans cinerea) are less commonly consumed.

Walnuts are rounded, single-seeded stone fruits of the walnut tree commonly used for the meat after fully ripening. Following full ripening, the removal of the husk reveals the wrinkly walnut shell, which is usually commercially found in two segments (three or four-segment shells can also form). During the ripening process, the husk will become brittle and the shell hard. The shell encloses the kernel or meat, which is usually made up of two halves separated by a partition. The seed kernels – commonly available as shelled walnuts – are enclosed in a brown seed coat which contains antioxidants. The antioxidants protect the oil-rich seed from atmospheric oxygen, thereby preventing rancidity.

 Cosmetics:

The special fatty acid ratio of linoleic acid to linolenic acid makes walnut oil a very agreeable skin oil. Linoleic acid facilitates cell metabolism and regeneration of the skin. That's why walnut oil is ideal for dry and damaged skin.

 

 

Food:

Walnut oil is a very popular and fine edible oil. With a pleasant taste it is great for refining salads and other cold dishes.

 It is light-coloured and delicate in flavour and scent, with a nutty quality.  Although chefs sometimes use walnut oil for pan-frying, most avoid walnut oil for high-temperature cooking because heating tends to reduce the oil's flavour and produce a slight bitterness. Walnut oil is preferred in cold dishes such as salad dressings.

 

Artistic use:

Walnut oil was one of the most important oils used by Renaissance painters. Its short drying time and lack of yellow tint make it a good oil paint base thinner and brush cleaner.

Some woodworkers favour walnut oil as a finish for implements that will come in contact with food, such as wooden bowls, because of its safety. Rancidity is not an issue because walnut oil dries when applied to wood in a thin coating. People who mix oil and wax to formulate wood finishes value walnut oil as an ingredient because of the edibility of both ingredients. The oil typically is combined with beeswax in a mixture of 1/3 oil to 2/3 beeswax.
